Proefnotitie
De wijnen van Sébastien Vincenti behoren al lang tot de beste van de Rhônevallei, met name die uit de relatief koele hooggelegen wijngaarden van de Mont Ventoux. “Deze cuvée combineert diepte met elegantie en kan zich meten met de topwijnen uit Gigondas of Châteauneuf-du-Pape”, aldus Robert Parker’s The Wine Advocate – en dat klopt. De door grenache gedomineerde cuvée is zuiver, puur en precies, met veel rood en zwart fruit, vooral donkere frambozen en bosaardbeien, maar ook een vleugje pruimen, kersen en wat sinaasappelschil. Dit wordt verrijkt met garrigue en Provençaalse kruiden, een vleugje zadelleer, zoethout en kreupelhout, peper en viooltjes. In de mond is de ‘Il Était Une Fois’ levendig en sappig, maar ook zijdezacht en sensueel, complex en toch plezierig, elegant en puur met een fantastische afdronk. Een echte cru uit het zuiden.

The 2022 Ventoux Il Était Une Fois is based on very old vine Grenache raised only in glass globes and amphora with 10% each of Syrah and Mourvèdre raised in new oak. It might be one of the grea Grenaches to come from the Ventoux and offers an incredible bouquet of kirsch, black raspberries, spring flowers, and Provençal spices. With remarkable purity, fine tannins, and a great finish, don't miss it.

The 2022 Ventoux Il Etait Une Fois is a serious, Grenache-based cuvée that continues to affirm Fondrèche’s position among the Ventoux’s leading estates. Based on 80% old-vine Grenache planted in 1936—matured in concrete eggs and amphorae—complemented by 10% Mourvèdre and 10% Syrah, both raised in new barriques, it offers up aromas of ripe blackberry, blueberry, menthol, violet and garrigue. Full-bodied and concentrated, it’s supple and textural, with a fleshy core of fruit framed by powdery tannins and concluding with a long, velvety finish. Combining depth with polish, this is a cuvée that can rival top wines from Gigondas or Châteauneuf-du-Pape, and it will reward a decade of cellaring.

A pure, lively and well-crafted red with notes of wild berries, wild herbs and baking spices. It’s medium-bodied with fine tannins and fresh acidity. There is bright fruit character, with a vivid core of succulent berries on the palate mingling with the dried herbs and gentle spices. Full of verve, with a silky texture and a succulent finish. Grenache, syrah and mourvedre. From organically grown grapes. Drink or hold.

De wijn
De Ventoux ‘Il Était Une Fois’ uit 2022 is een cuvée met 80% grenache-wijnstokken uit 1936, gerijpt in gebruikte vaten, betonnen eieren en amforen. De grenache wordt aangevuld met 10% mourvèdre en 10% syrah, beide gerijpt in nieuwe barriques. De wijngaarden, die profiteren van de koele valwinden van de Mont Ventoux, worden al sinds 2009 gecertificeerd biologisch bewerkt. De bodem bestaat hier uit alluviale grond met grote kiezelstenen, kwartsiet en een kalkhoudend en leemachtig oppervlak.
