Proefnotitie
Alleen al het bouquet van deze wijn is in de beste zin van het woord bedwelmend: intense kersenaroma’s, ingekookte pruimen, florale nuances, een vleugje geel fruit, zeer rijpe abrikozen, het fijnste hout en steeds weer tonen van kersen. De indruk wordt met elke minuut intenser en voller. Ook in de mond is de wijn volumineus en toch charmant, met grote diepte, zachte tannines en een fantastische lengte.

Tobacco, dark fruit and earth on the nose. The palate shows exceptional balance, with incisive acidity and precise dark fruit that are deeply appealing for their harmony. A blend of 55% cabernet sauvignon, 35% merlot, 5% cabernet franc and 5% petit verdot. This is appealing now, but it will evolve wonderfully. Drink now or hold. 10 Years On retrospective.

This luscious wine from old-vine Sauvignon Blanc is filled out even further by the 30% Sémillon in the blend. It is rich in feel and intense in a white fruit flavor, with touches of spice from the wood aging. It is fresh and textured on the finish. Drink from 2024.

The 2016 Domaine de Chevalier is a thrilling wine. Dense and beautifully layered, the 2016 is also quite a bit richer than it usually is. Cabernet Sauvignon aromatics and structure pulse through the wine. The red-toned fruit is incredibly primary at this stage. Readers should be prepared to cellar the 2016 for at least a handful of years. It has been nothing short of magnificent on the three occasions I have tasted it so far.

De grote drie: pizza, hamburger, steak. Doet het ook goed bij streetfoodfavorieten zoals pulled pork.
De wijn
In deze wijn speelt cabernet sauvignon de hoofdrol, die uitstekend gedijt op de grindrijke bodems met een hoog gehalte aan leem en zand. Kleinere hoeveelheden merlot en cabernet franc vullen de cuvée aan. De rijping vindt op klassieke wijze plaats in Frans eikenhout, waarbij ongeveer 30% nieuw is.
